The 2021 Chablis Montée de Tonnerre 1er Cru, of which half comprises fruit from the Chapelots climat, has a delightful oyster shell-infused bouquet that blossoms in the glass - citrus peel intermixed with orange zest. The palate is very well-balanced, with a little more weight and concentration than the Butteaux. It is taut and linear, with a lick of salinity on the finish. Excellent.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
