Jean-Marc Roulot’s 2016 Bourgogne Blanc is absolutely delicious. Fresh and vibrant, with lovely complexity in its peer group, the Bourgogne Blanc pairs beautifully with the early courses on this menu. I save a bit for later for the cheese, as I especially adore white Burgundy with cheese. Even after several hours, the 2016 is gorgeous.

Bourgogne AOC represents the entry-level wines of Burgundy, offering a taste of the region's winemaking traditions.
